- Cut pork spareribs into bit-sized pieces
- Stew the ribs in small flame with 3 tbsp vinegar and 2 tbsp sugar, 1 tbsp light soy sauce, 1 tsp dark soy sauce, some ground black pepper, 2-3 ginger pieces, chopped garlic, 1 star anise , 2 bay leaves and water (enough to cover the ribs). To taste.
- Stew for 1 to 1.5 hrs until the cartilage part is soft enough to bite.
- It is done when the sauce reduces down and coat the ribs.
