Stir fry Chicken with Ginger & Onion

I use brown chicken for this dish.

- Cut up the chicken. Season the pieces with ginger powder, wine, black pepper, dark soy sauce, light soy sauce and tiny bit of sugar.
- Stir fry lots of ginger and green onion till the fragrant comes out
- When the wok is very hot, put in chicken pieces and add some wine to the wok.
- Keep stir frying the chicken until it's done. Then serve.

Stew Red Tail Snapper

Nelson's favourite fish stew. Today I buy a red tail snapper. Nelson pan fry it and add some onion, dark soy sauce, light soy sauce and sugar, then stew for a few minutes.

Shrimp with Tomato Garlic Sauce

I use Lee Kam Kee's tomato garlic sauce which is recommended by my father-in-law.

- Peel shrimps and marinate with some white pepper and salt in the fridge
- Pan fry the shrimps
- Add the sauce once the shrimps turn pink. Don't overcook the shrimps.
