Pan-fried Soy Sheet with Fish Cake 腐皮魚卷

          • 魚漿加入欖菜,胡椒粉, 包入腐皮內。用小火煎熟。
  • 如果把魚肉薄薄地塗在腐皮上,然後卷起,效果應該更好,口感更脆。
用泰式雞醬配食。

Stew Tofu, Black Fungus, and Oyster Mushroom

Sauce :
  • oyster sauce
  • Maggi sauce
  • garlic chili sauce
  • water
  • cornstarch
Stir fry ground pork until it’s cooked. Add in the tofu, black fungus and oyster mushroom, and stew then in the above sauce for 15 min. Then thicken the sauce by cornstarch. Add chopped green onion.

Tofu topped with bamboo fungus and mushroom

  1. Soak bamboo fungus in cold water until soft
  2. Soak dried mushroom in hot water until soft. Then cut into stripes.
  3. Clean the bamboo fungus and cut into short lengths
  4. Cut soft tofu into pieces. Microwave for 3 minutes.
  5. Heat the wok with oil, chopped garlic and ginger.  Stir fry the fungus and mushroom and sprinkle some cooking wine.
  6. Add oyster sauce, few dashes of maggi sauce and water . Stew for 10 minutes. Then thicken the sauce by adding starchy water. Add chopped green onion and few dashes of sesame oil.
  7. Pour the mixture onto the tofu.

Luffa 絲瓜 and Beancurd with Dried Shrimp

  1. Cut luffa 絲瓜 into pieces
  2. Cut each beancurd pocket into 6 pieces
  3. Soak a handful of dried shrimp into hot water until soft. Then coarsely chop them.
  4. Heat the wok with oil, add the dried shrimp together with some ginger and garlic into hot oil until fragrant.
  5. Add luffa 絲瓜 into the wok, pour in some wine and stir.
  6. Add some chicken broth and the beancurds. Stir. Then cover the wok.
  7. Serve hot when it’s done.

Tofu and Abalone Mushroom Stewed in Oyster Sauce

- Cut the abalone mushroom and blanch it in boiling water
- Pan fry tofu (medium firm)
- Stew tofu & abalone mushroom with oyster sauce, wine, water, pepper, green onion for about 15-20 min.

Tofu and Ribs with Basil & Sa Chai Sauce

Got a big bunch of basil in the fridge and want to use it up. Heat up the Sa Chai Sauce, sugar and pepper. Add the tofu and ribs, add soy sauce and stew for 15 min. Add basil leaves before serve.

Soy Stick with Leek

Tried this in a chinese restaurant and it tasted so good. Went to buy the ingredients and tried it at home. It didn't turn out well. The soy stick is too think, maybe next time I can try fresh soy sheet.

- Stir fry some ginger and dried red pepper
- Put in soy stick, add some light soy sauce and water
- When soy sticks soften, add in the leek.
- When the leek softens, add some seasame oil and then serve.
