Stir Fry Crab with Garlic & Fermented Soy Beans

Ingredients :

  • 1 dungeness crab (cut into pieces)
  • 1 tbsp fermented soy beans
  • 2 tbsp chopped garlic
  • 3 green onion (chopped)
  • 1 tbsp red pepper flakes (bird chilies will be even better)
  • sugar
  • chicken soup

Heat the wok with oil, then add fermented soy beans, chopped garlic, green onion and red pepper flakes until fragrant. Then add crab, stir fry until it’s hot. Sprinkle some wine. Then add some chicken soup. Keep stir frying until the crab is cooked and all the liquid is absorbed. Sprinkle some seasoned salt (淮鹽) on top and then serve.

Pan-fried Soy Sheet with Fish Cake 腐皮魚卷

          • 魚漿加入欖菜,胡椒粉, 包入腐皮內。用小火煎熟。
  • 如果把魚肉薄薄地塗在腐皮上,然後卷起,效果應該更好,口感更脆。
用泰式雞醬配食。

Thai Style Grilled Pork 泰式燒腩肉

Marinate the pork belly with oyster sauce, cilantro, ground black pepper, rice wine and some soy sauce.

Then grill or broil the pork belly until it’s done. Rest for 10 min. Then slice the pork.

Dipping Sauce : chopped bird chilies, fish sauce, chopped garlic, sugar, some chopped cilantro.

山東燒雞

【材料】:雞腿2支、小黃瓜2條、蔥1支、薑3片、紅辣椒3支、大蒜3顆、花椒粉(粒 )1小匙、八角1粒、醬油1大匙、黑醋2大匙、香油1小匙、紅油2大匙、糖1大匙
【做法】:
1、雞腿加入醬油醃
2、小黃瓜拍鬆切斷,用少許鹽醃一下。
3、煎雞腿至表面上色
4、蔥切末、薑切片、蒜頭拍碎、辣椒切碎,備用。
5、將雞腿放入薑、蔥、花椒、八角、酒、醬油之後,入鍋蒸約15分鐘 (或微波爐煮)
6、將黑醋、白醋、糖、醬油、香油、辣椒、青蔥、薑、蒜頭、紅 油、以及蒸好的雞汁,調和成淋料。
7、雞腿待涼之後撕成條狀雞絲。
8、小黃瓜鋪底,放入雞絲,淋上調味料,即完成「山東燒雞」。

泰式生菜包


1. 手剁豬肉碎 450g ( 或同等份量之牛絞肉、雞絞肉)
2. 尖咀紅辣椒 1隻半-2隻
3. 蒜茸及蔥茸 2 Tbsp ( 我還加了半片香茅嫩葉碎)
4. 魚 露 45g
5. 砂 糖 25-30g
6. 青 檸檬 汁 30g 或1個
7. 薄 荷 葉 適量 ( 又加了一些羅勒, 見圖)
8. 紅蔥頭或紫洋蔥 適量 (切幼絲)
9. 任何生菜全葉 適量 (揀選沒有穿和爛的最好)
10. 炒 米 碎 約半杯 ( 用不完可入玻璃樽留下次用)
11. 尖咀紅辣椒 1隻半-2隻

做法其實非常簡單:


1. 我用乾凈不沾鍋以”小火”將香米炒香,直至外殼有點脹起,色澤有點金黃時就可以了, 然後裝進乾凈布袋中, 用桿麵棍輾碎。


2. 下一大匙橄欖油, 鍋熱後放辣椒, 蒜茸及紅蔥茸爆香,加入豬肉炒至將熟(我還加了一小匙自家釀的糯米酒, 因為手剁的豬肉比較會黏在一起, 灑一點酒可以使沾黏在一起食物較易分開, 這個方法我也會用在黏作一團的炒飯上, 很有效, 而且又能增加食物的香氣),再加香茅碎, 魚露和砂糖等調味料, 煮至入味即可起鍋。


3. 豬肉稍待數分鐘後,加入檸檬汁、羅勒碎、薄荷葉碎和紅蔥頭絲拌勻,在中央撥個穴, 再加入米碎在汁液中, 把肉碎蓋著米碎, 讓米碎吸收汁液。


4. 吃時先拌勻, 再包上生菜葉即可享用。

Stew Tofu, Black Fungus, and Oyster Mushroom

Sauce :
  • oyster sauce
  • Maggi sauce
  • garlic chili sauce
  • water
  • cornstarch
Stir fry ground pork until it’s cooked. Add in the tofu, black fungus and oyster mushroom, and stew then in the above sauce for 15 min. Then thicken the sauce by cornstarch. Add chopped green onion.
